•Maintain standards in food preparation, food quality and presentation •Maintain dry store par levels, stock rotation, receiving and correct storage procedures •Ensure all cool rooms, fridges, freezers and dry store areas are maintained in a clean and safe manner, in compliance with health and company regulations. •Ensure all food is prepared in line with standard recipes, assist implementing new menu items •Ensure all kitchen staff follows safe working practices. •Ensure you are in control and organised in your deemed kitchen section. •Nurture junior staff in correct food handling practises, by delegating, guiding, teaching and showing juniors rightful practises •Covering all duties required of the Senior Chef in their absence. •Maintain personal hygiene and grooming standards and to ensure these standards are maintained with junior staff. •Inform Senior Chef of missing or limited items on the daily menus. •Never leave fresh produce unattended •Guide all junior chefs to practice proper handling of knives, sharp utensils and dangerous equipment with in correct safety standards •Ensure that all chefs clean their sections and equipment that they were responsible for during their service and before shift changes take place •Inform Senior Chef or Store Manager of any faulty, broken or missing equipment in the kitchen •Enforcing proper handling of high risk foods e.g. dairy, meat & seafood and to be aware of cross contamination •Attend training sessions and meetings as directed. •Ensure clear briefings of the day’s event are handed over between shifts of each kitchen •Effectively handle, as soon as possible, any complaint or difficulty with a guest. •Assist with achieving a level of service quality that consistently meets the expectations of guests and internal customers. •Work effectively, efficiently, professionally & in a manner which is deemed acceptable by the Sous Chef & Chef.
•Bakery skills •Experience in food handling •Knowledge in all aspects of kitchen operations from the ground up •School or hospitality internship training •Wellness cuisine experience •Enjoys cooking •Completed Commercial Cookery & obtained a trade certificate or the equivalent •High School Certificate
